What is Safflower Yellow?

While safflower yellow is often known for its essential oil and use in cardiovascular disease, it is also a naturally occurring yellow water-soluble pigment derived from the petals of the safflower plant (Carthamus tinctorius L. It is currently permitted for use in food in the EU. (Other names: Carthamus Yellow, CI Natural Yellow 5).

Safflower Yellow is a natural food pigment extracted from safflower petals through the process of extraction, filtration, purification, concentration, sterilization, spraying, and drying. The main coloring component is carmine.

Shelf Life If the storage condition attains as mentioned above, the powder is two years from the production date. Once opened, should seal up again and use within six months.

The appearance of safflower yellow is yellow or brown-yellow powder. It can easily dissolve in water and ethanol solution, but not in ether, petroleum ether, oil, and acetone. It is an excellent coloring agent for starch, but slightly coloring for protein. Ferric ion can make it becomes black. It has good resistance to light and high temperatures.

In Europe, safflower yellow is a very popular natural pigment. It can be widely used in instant rice & flour products, soda pop, fruit-flavored beverages, beverages of fruit and vegetable juice (pulp), decorative fruits and vegetables, frozen drinks (edible ice excluded), candy, jelly, fillings for cereal foods, salted and cured meat products, condiments, puffed food. It can be used in beverages to improve their heat resistance and light resistance and can be combined with L- ascorbic acid. It can also be used in combination with caffeic acid, rosemary, sesamol, Salvia, and so on to improve its light stability.

Compared to the distinctive flavor of turmeric, safflower yellow does not affect the flavor.

Safflower yellow is not affected by temperature, light, and pH.
